Menu Plan Monday



For those of you that don't plan a menu, I have no clue how you do it. My family would be eating takeout at least half the time and spaghetti the other half. Here is this week's plan.

Monday - We were supposed to have meatloaf tonight (figuring the teens with pulled wisdom teeth might be able to eat it) but with yesterday being John's birthday I got mixed up and forgot to defrost the beef. Soooooooo dh is picking up something at the store, I have no clue what... if the teens can't eat it or don't want to, then they can have eggs or pancakes.

Tuesday - We will have meatloaf, mashed potatoes and green beans. Easy foods for post-oral surgery teens.

Wednesday - We are planning to go to Chattanooga to the aquarium (MJ hasn't been since 2nd grade) and not sure if we'll be home for dinner so it's spaghetti w/meat sauce; quick,easy and another soft meal for the teens.

Thursday is New Years Eve so we eat junk - Sausage Balls, mozzarella sticks, pizza rolls, buffalo chicken tenders, cheese and crackers, couldn't find a cheese ball at the commissary so instead we're having hummus with crackers, Muddy Buddies. Theresa requested Taquitos so those were added as were spicy sweet potato fries (an impulse buy).

Friday (New Year's Day): We are transplanted Yankees - we do NOT eat black-eyed peas. No way, no how!!! We have our own family tradition of homemade calzones. Much tastier and full of nutrition (think protein and calcium from all the cheese).



Saturday - Scott and James are going to the PapaJohns.com Bowl in Birmingham to watch UConn whoop South Carolina. Not sure yet what the other kids and I will eat. We may get BBQ from Lawlers; just not sure.

Sunday - Dh will stir fry Kung Pao Chicken.

But black-eyed peas are nice too! LOL!

Ours don't look nearly as pretty but they sure are tasty
